Ingredients
  • 9 chicken thighs
  • ⅛ onion
  • ¼ can coconut milk
  • curry
  • salt
  • pepper
  • cumin
  • coconut oil
Steps
  1. Preheat oven to 375
  2. Mix Spices in bowl and toss chicken in rub, coating all sides
  3. Place chicken on foil lined pan and place in oven until chicken cooked
  4. With 5 minutes before chicken is completed, fry thinly sliced onion in coconut oil in a large fry pan
  5. Add cooked chicken and drippings to frypan and mix with onions
  6. Add coconut milk and simmer for 5 to 10 minutes
