  • 1 pound small (71 to 90) raw, peeled shrimp
  • 1 tablespoon olive oil
  • ½ pound andouille or other smoked sausage, chopped
  • 1 cup chopped onion
  • ½ cup chopped sweet bell pepper, any color or combination
  • ¼ cup chopped celery
  • 1 tablespoon minced garlic
  • 2 cups chicken stock or broth
  • 1 (15 ounce) can diced or stewed tomatoes, cut up, undrained
  • 2 cups long grain rice
  • ¼ teaspoon Creole or Cajun seasoning (like Slap Ya Mama), or to taste
  • ¼ teaspoon freshly cracked black pepper, or to taste
  • ½ teaspoon each dried oregano, dried thyme, cayenne or hot pepper sauce
