Creamy Sauerkraut Soup with Sausage and Potatoes
Ingredients
  • 4 ½ cups water or chicken broth
  • 4 cups potatoes peeled and cubed
  • 1 teaspoon kosher salt
  • ¾ pound smoked sausage sliced ¼ inch thick
  • 16 ounces sauerkraut 1 small can, undrained
  • 1 tablespoon neutral oil such as canola
  • 1 medium onion peeled and diced. About 1 cup
  • ½ teaspoon garlic chopped
  • 1 Teaspoon dried dill or 1 Tablespoon fresh dill
  • ½ teaspoon caraway seeds
  • 1 cup sour cream
