Roasted beet and carrot salad
Ingredients
  • 6 fresh red beets cut to ¼" the slices
  • 1 tbsp olive oil
  • 4 large peeled carrots cut diagonally in thin slices
  • 4 cups tightly packed salad greens
  • 2 radishes, thin sliced
  • ⅓ cup balsamic  vinaigrette dressing
  • ⅓ cup crumbled reduced fat feta cheese.
Steps
  1. Heat oven to 425 deg
  2. Toss beets w/ 1-½ tsp olive oil; spread onto half baking sheet sprayed with cooking spray. Toss carrots w/remaining oil. Spread to other side of baking sheet.
  3. Bake 20 to 30 min or tender, cool 5 min
  4. Cover leg platter w salad greens  top with roasted veggies and radishes. Drizzle dressing. Top with cheese
