Rice Pilaf with Nuts and Dried Fruit
Ingredients
  • ⅓ cup pistachios , shelled
  • ⅓ cup slivered almonds
  • 2 tbsp (30g) unsalted butter (or olive oil)
  • 2 garlic cloves , minced
  • ½ small onion , finely chopped
  • 1 cup (180g) uncooked basmati rice , (Note 1)
  • 1 ¾ cups (435ml) vegetable or chicken broth / stock
  • ½ cup dried sultanas or raisins
  • ¼ cup dried apricots
  • Finely chopped parsley , optional garnish
