I love to eat so I love to cook. Recipes are just starting points. If I had to eat one cuisine for the rest of my life, it would be Mexican. But I would complain loudly.

Because a whole head can be difficult to procure, this recipe uses beef cheek meat, which can be found at most butcher counters.

3 dried guajillo chiles, stems and seeds removed

1 dried cascabel chile, stem and seeds removed

2 pounds beef cheek

Kosher salt

Black pepper

3 to 4 cloves garlic

½ teaspoon Mexican oregano

½ teaspoon cumin

3 cups water

1 small white onion, chopped

1 bay leaf

Warm corn tortillas, for serving

Salsa, for serving

Fresh cilantro, for serving
