Lemon/Basil/Honey Glazed Chicken, Mashed Taters (Dairy Free), Broccoli - $3.38 Ea
Ingredients
  • 2 lb chicken - ($3.98)
  • Juice of 3 lemons - ($2.97)
  • 1 to 2 tbsp honey - ($0.24)
  • 3 to 4 cloves garlic - ($0.45)
  • Mess of fresh basil (12-ish leaves) - ($1.50)
  • 1 tbsp olive oil - ($0.09)
  • S&P to taste
Steps
  1. Depending on your breast size, you may want to beat the meat out flat. Unless you like it thick.
  2. Mix all that other stuff together in a ziploc or a bowl. Pop the chicken in and massage the breasts to make sure you cover them thoroughly in the marinade. Let sit 30 to 60 minutes. Note: don't let it marinate in lemon juice overnight! The texture of your meat will be totally fucked.
  3. Heat skillet over medium heat. Remove chicken from marinade and scrape off any extra basil leaves and garlic (these will burn).
  4. Cook chicken 3 to 4 minutes per side until done. Note: the honey (I suspect it's the honey, anyway) will blacken and burn on the outside of your chicken in a hurry. Typically, I will sear my chicken on medium high - high heat to get that nice sear. Don't do that here. My first two were breasts were barely salvageable. On the second two, I reduced heat to medium and flipped the chicken much more often in an attempt to prevent screwing it up. This worked fairly well. Ya'll might could do better. Maybe cast iron is not the best cookware in this case. Not sure.
  5. In a sauce pan, bring the leftover marinade to a boil and allow it to reduce into something resembling a thin glaze. Pour over chicken, taters, and/or broccoli.

  8. -1.5 lb yukon gold taters (I've tried this with russet and they work perfectly fine and are cheaper) - ($1.99)

  11. -.5 cup chx broth - ($0.16) (add a touch more if you want a creamier consistency)

  15. Top with fresh parsley if you like.
  16. About 1 lb Broccoli - ($1.49) - however you like. You're the boss. Steam, roast, sautee, boil. You're the Baron of Broccoli Town.
