Easy Lemon Caper Baked Cod
Ingredients
  • 4- 1" to 1¼" thick cod fillets (about 175g | 6oz each)
  • 2 tbsp ghee, (store-bought or homemade)
  • 1 tbsp dry white wine or vermouth (use caper brine to keep squeaky clean/alcohol free)
  • 1 large clove garlic, minced
  • ½ tsp salt (I use Himalayan salt)
  • ¼ tsp ground white pepper
  • 1 tbsp finely chopped fresh parsley
  • 2 tbsp capers
  • 2 lemons
