Chicken Marengo Recipe (One Pot)
Ingredients
  • 8 (about 3 pounds) bone-in, skin-on chicken thighs
  • 2 teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup all-purpose flour
  • 2 tablespoons olive oil
  • 4 cloves garlic, chopped
  • 1 yellow onion, diced
  • 8 ounces cremini mushrooms, sliced
  • 1 tablespoon fresh thyme leaves
  • 2 bay leaves
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 1 ( 15- ounce) can diced tomatoes and their liquid
  • 2 tablespoons chopped fresh parsley, for serving
  • 1 pound cooked pasta or 2 cups cooked  rice, for serving
