Roasted butternut squash
Ingredients
  • 4 slices bacon
  • 3 tbsp vinaigrette dressing
  • 1 tsp grey poupon mustard
  • 1butternut squash, peeled, cubed (3 cups)
  • ½ lb green beans, trimmed
  • 2 red peppers quartered
  • 1 onion, cut into 6 wedges
Steps
  1. Oven: 425
  2. Cook bacon. Reserve 2 tbsp in large bowl
  3. Drain on paper towel
  4. Aggressive dressing, mustard, sugar, mix. Reserve 1 tbsp. Toss veggies with remaining, spread on baking sheet prepared with cooking spray. Bake 30 min or til done, turn after 15 min.
  5. Add to bacon in a bowl and mix reserved dressing.
