Healthy Butternut Squash Shephard's Pie
Ingredients
  • 1 ½ lbs grass-fed ground beef
  • 1 to 2 tablespoons butter, coconut oil or other fat of choice
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 turnip, chopped
  • 6 oz mushrooms, sliced
  • 2 teaspoons minced garlic
  • 3 tablespoons all natural ketchup (I use THIS)
  • 3 tablespoons all natural worcestershire sauce (I use THIS)
  • 2 cups chicken stock or broth
  • 2 tablespoons arrowroot powder
  • heaping ½ teaspoon smoked paprika
  • salt and pepper
  • 1 butternut squash or 3 large sweet potatoes, cut into chunks
  • 1 tsp additional minced garlic
  • 3 tablespoons butter or coconut oil
  • ¼ teaspoon additional smoked paprika
  • sea salt and pepper
