The plan coconut pancakes
Our gluten free coconut flour pancakes are PACKED with protein, low in sugar and super delish. We got this healthy comfort food DOWN! This recipe is from The Metabolism Plan Cookbook .

4 tbsp coconut flour
¼ tsp baking powder
¼ tsp baking soda¼ tsp sea salt
¼ tsp cinnamon
⅛ tsp cardamom1 tbsp honey
4 eggs
½ cup coconut milk or rice milk
Avocado oil for frying
Using a medium bowl, combine the coconut flour, baking powder, baking soda, sea salt, cinnamon, cardamom, and honey. Add in the eggs and milk and stir until completely combined and thick.

This may take several minutes; the batter will thicken as you stir (you can also mix this in a blender or food processor). Spoon the batter into an oiled skillet, and smooth with a spoon. Cook over medium heat until lightly browned, flipping carefully. Transfer pancakes to a plate and add topping of choice!
