  • 4 oz. Gruyère, coarsely grated, divided
  • 1 sheet frozen puff pastry (one 14-oz. package or half of a 17.3-oz. package), thawed
  • 1 Tbsp. Dijon mustard
  • Chopped chives (for serving)
