Ingredients
  • 8 cups ice water divided
  • 3.2 oz salt (roughly ½ cup 2 Tbsp Kosher salt or ½ cup of table salt)
  • 1 ½ Tbsp (20g) pink salt (6.25% sodium nitrite curing salt)
  • ½ cup pancake or maple syrup
  • 1C granulated sugar
  • 1C brown sugar
  • 8 cloves garlic peeled and rough chopped (I used minced 1 ½ T)
  • 4 to 6 fresh or dried bay leaves
  • 1 Tbsp dried thyme or a generous handful of fresh thyme
  • 1T onion powder
  • 1 Tbsp whole black peppercorns
  • 2 Tbsp apple cider vinegar
  • center cut pork loin 5.195 lbs 3.5” across when squished between fingers. I cut it in half and used two zip lock gal bags
