Ingredients
- 8 cups ice water divided
- 3.2 oz salt (roughly ½ cup 2 Tbsp Kosher salt or ½ cup of table salt)
- 1 ½ Tbsp (20g) pink salt (6.25% sodium nitrite curing salt)
- ½ cup pancake or maple syrup
- 1C granulated sugar
- 1C brown sugar
- 8 cloves garlic peeled and rough chopped (I used minced 1 ½ T)
- 4 to 6 fresh or dried bay leaves
- 1 Tbsp dried thyme or a generous handful of fresh thyme
- 1T onion powder
- 1 Tbsp whole black peppercorns
- 2 Tbsp apple cider vinegar
- center cut pork loin 5.195 lbs 3.5” across when squished between fingers. I cut it in half and used two zip lock gal bags
