Broccoli Cauliflower Salad
Ingredients
  • 1 cup broccoli florets (time saver: bagged)
  • 1 cup cauliflower florets (time saver: bagged)
  • 2 hard boiled eggs; diced (optional)
  • ½ to 1 cup of diced cheddar cheese (flexible based on your dietary needs; omit if it’s not part of your plan)
  • 6 slices of cooked, crumbled, bacon (time saver: 4 to 5 tablespoons of bagged bacon bits or the amount to your liking; bacon is my love language )
  • 3 to 5 tbsp of Diced Red Onion (optional)… love the taste it adds to it.
  • 1 cup of Mayonaise (I love the Chosen Brand; Avocado Oil based)
  • ⅓ cup of Swerve (or any sugar substitute); calls for ½ cup of regular sugar (substitute is 1:1), but have found I can always add more later if I want to make it sweeter)
  • 2 tbsp of white wine vinegar
