Mexican Chicken Quinoa Casserole
Ingredients
  • 1 cup uncooked quinoa
  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces (about 2 large breasts)
  • 1 tablespoon, plus 2 teaspoons chili powder
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon minced garlic (about 2 cloves)
  • 1 (15-ounce) can fire-roasted diced tomatoes, well drained
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup plain Greek yogurt
  • ¾ cup freshly grated cheddar cheese, divided
  • ¾ cup freshly grated mozzarella cheese, divided
  • Fresh cilantro, for serving
