Beetroot Pastrami Sandwich

  • ½ tsp ground coriander
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • salt
  • olive oil
  • 4 thick slices of bread
  • 160 g sauerkraut, see notes
  • 8 lettuce leaves, we use butterhead
  • subheading: For the tofu mayo:
  • 300 g silken tofu
  • ½ lemon, juice only
  • ½ tsp Dijon mustard, plus extra for serving
  • ½ tsp maple syrup
