Ingredients
  • Olive oil
  • 1 onion, peeled and finely chopped
  • 4 cloves of garlic, peeled and finely chopped
  • A thumb-sized piece of ginger, peeled and finely chopped
  • 1 red or green chilli, finely chopped
  • 1 tbsp chilli powder
  • 1 tsp cumin seeds, bashed
  • 1 tbsp chipotle paste
  • 3 tins of chopped tomatoes
  • 300g Puy lentils (I used a can, but I think you’re supposed to use dried lentils)
  • 100g bulgar wheat
  • 100g quinoa
  • 1x400g tin haricot beans
  • 1 to 2 litres vegetable stock
  • 1 heaped tbsp cocoa powder
  • Sea salt and freshly ground pepper
