chunkier zuppa toscana, IP

Ingredients
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1½ pounds spicy Italian sausage (or mild, depending on your eaters, then add red pepper flakes as desired when serving)
  • 4 Tbs garlic, minced
  • 3½ pounds UNPEELED golden potatoes, thinly sliced (¼ inch)
  • 8 cups chicken broth
  • 1 tsp salt (depending on how salty the chicken broth is)
  • ½ tsp pepper
  • 1 tsp Old bay seasoning
  • large bunch kale, washed, stems removed, chopped in ribbons
  • 3 cups half-and-half, heavy cream, or coconut milk
  • 1 pound bacon, oven-baked
  • Parmigiano-Reggiano cheese, freshly grated

Steps
  1. With IP on sauté-high mode, when HOT displays, add 2 tablespoons olive oil until hot.  Add onion and sauté 3 minutes.  Add sausage, breaking up into pieces and sauté until browned, about 5 minutes. Add garlic to cooking pot and sauté 1 more minute.
  2. Add the potatoes and broth (you can heat the broth first in the microwave so the pot will come to pressure faster), salt, pepper, Old bay.
  3. Manual for 8 minutes. NPR 10 minutes, then QR.
  4. Add kale.  Return the temp to sauté  mode and cook 10 minutes or so until kale is tender.  Or you can blanch the kale in boiling water (teapot) and let kale soak and cook in your already dirty measuring cup.  Or you can microwave it or even cook it on the stove, if you don't care about washing dishes.
  5. Add half-and-half.
  6. Bake a pound of bacon in the oven while this is sautéing, which cuts down on the cook time about 10 minutes, plus baked bacon is nice and crispy.
  7. garnish with fresh grated Parmigiano-Reggiano cheese and the chopped bacon. [me: and chopped tomatoes?]
Notes
  • This is 50% more meat and potatoes than the standard recipe, and uses less water also so it's nice and chunky (main dish). On the table from start to finish in less than an hour with 20 minutes work.  Serve with biscuits.
  • "Whole foods sausage is awesome for this (Ive noticed that the sausage will make or break this soup). If you like a little heat, its easier to add a spicy italian sausage than trying to regulate the red pepper flakes."
  • "I've made it with canned coconut milk instead of cream and it is delicious! Can barely tell the difference."
  • Sherry's Instant Pot Version of Zuppa Toscana Soup (Olive Garden Copycat) to make this (or any potato soup) thicker:  Use a potato peeler and "shave" a whole potato in with it. Makes it thick by adding substance rather than a thickener (like flour or cornstarch; can also replace cream/half and half). They just blend into the broth making it thick in the end.
