Cheesy Chicken, Broccoli and Quinoa Casserole
Ingredients

  • 1 Cup Uncooked Quinoa {4 Yellow Containers}
  • 2 to 3 Boneless Skinless Chicken Breasts, Cubed {4 to 5 Red Containers}
  • 2 Heads of Broccoli, Chopped {4 to 5 Green Containers}
  • ¼ White Onion, Finely Diced
  • 4 Cloves of Garlic, Minced
  • 1 Cup Cheese + Extra for topping casserole (I use ½ Cheddar and ½ Parmesan) {3 to 4 Blue Containers}
  • 1 Tbs Flour (Whole Wheat or Coconut)
  • 1 Cup Milk or Milk Substitute (Almond, Coconut, etc…)
  • 1 ½ tsp Cumin
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • ½ tsp Black Pepper
  • 1 tsp Oregano
  • 2 tsp Dried Parsley
  • ¼ tsp Cayenne or Cajun Seasoning *(Optional)
