Ingredients
  • ¼ cup pumpkin seeds, toasted
  • Kale, thinly sliced
  • Brussels Sprouts, thinly sliced
  • 4 green onions, thinly sliced
  • Dressing
  • ⅓ cup olive oil
  • 2 shallots, small dice
  • 4 clove garlic, minced
  • 1 tsp salt
  • 1 ½ tsp oregano
  • 1 tsp garlic powder
  • 1 tsp Dijon mustard
  • 2 T nutritional yeast
  • juice 1 lemon
  • Rice vinegar
Steps
  1. Sauté shallots and garlic. Turn off heat. Add other dressing ingredients.
  2. Toss dressing with kale, Brussels and green onions.
  3. Serve over bulgur if you like.
