Bakery Style Apple Cinnamon Muffins
Ingredients

  • 2 cups all purpose flour (240g) + 1bsp for coating apples (9g)
  • 2 tsp baking powder (8g)
  • ½ tsp salt (6g)
  • 1 tsp cinnamon (3g) + ½ tsp for coating apples (1g)
  • 1 ¼ cup granulated sugar (250g)
  • 8 tbsp unsalted butter (114g) melted and cooled
  • 2 eggs
  • 2 tsp vanilla extract (5ml)
  • ½ cup milk (118ml)
  • 1 ½ cup peeled & diced apples (5 oz, about 2 medium apples) I like granny smith but any flavorful apple works
  • subheading: Crumble Topping:
  • ½ cup all-purpose flour (60g)
  • ⅓ cup granulated sugar (70g)
  • 3 tbsp brown sugar (40g)
  • 1 tsp cinnamon (3g)
  • pinch salt
  • 4 tbsp unsalted butter (60g) melted and cooled
  • subheading: Apple Topping (Optional):
  • 1 cup peeled & diced apples (3.5 oz, 1 to 2 apples) I like granny smith but any flavorful apple works
  • 1 tbsp granualted sugar (12g)
  • 1 tbsp lemon juice (7ml)
