Cream-Filled Meringue Cookies
Ingredients
  • Unsalted butter, for greasing
  • Cornstarch, for dusting
  • 5 egg whites, (about ¾ cup), room temperature
  • ⅛ teaspoon cream of tartar
  • 1 ½ cups superfine sugar, (or just blitz granulated sugar in a blender until finely ground but not powdery)
  • 1 cup heavy cream, chilled
  • 3 tablespoons confectioners’ sugar
