Chilaquiles Rojos

  • If you’re craving a HEARTY MEXICAN BREAKFAST, look no further. The delicious RED sauce with the crunchy tortilla chips all wrapped up together with the eggs and refried beans are enough to call it a winner. This is a simple dish, and when my Ron is wanting a hearty meal this is one dish that is on the top of his list because it always hits the spot. I’m always happy to prepare these CHILAQUILES ROJOS because it’s quick, easy and I love them too. There’s only one way to know for yourself, and that’s to just give them a try and then thank me later. ❤️

  • INGREDIENTS __________________
  • 5 large Roma tomatoes
  • 2 Guajillo Chiles (clean, seeds & veins removed )
  • 5 Chile de Arbol (optional)
  • 2 large garlic cloves
  • Salt as needed
  • 2 tsp chicken bouillon (I used KNORR)
  • ½ tsp ground cumin
  • ¼ tsp Mexican oregano
  • ¼ small onion
  • Freshly grated Monterrey jack Cheese (as needed)
  • 1 Tbsp vegetable oil
  • ¼ C. Onions (julienned )
  • Chicken broth or water as needed (i used about ¼ C.)

  • 10 Corn tortillas
  • 2 eggs
  • Queso Fresco as needed
  • Mexican CREMA as needed
  • A few slices of onion
  • Avocado (mashed or sliced)
