Roasted Acorn Squash with Mushroom Ragu

  • 1 cup sliced mushrooms
  • 1 (15-oz.) can low-sodium crushed tomatoes
  • 1 tsp. fresh oregano (or thyme), finely chopped
  • Sea salt and ground black pepper (to taste; optional)
