Ingredients
  • 7 1/16 oz of stale bread, diced (including crusts)
  • 6 ¾ fl oz of milk
  • 2 eggs , beaten
  • 1 pinch of nutmeg
  • 1 knob of butter
  • 1 onion, finely diced
  • 5 ⅓ oz of Tyrolean speck, diced into lardons (or smoked pancetta)
  • 3 oz of Emmental, or local cheeses such as Venezza or Malga if you can find them, finely grated
  • 5 ⅓ oz of flour
  • 1 handful of parsley, chopped
  • salt
  • pepper
