Lemon and currant scones

Ingredients
- 1½ cups gluten free self raising flour
- ¼ cup rice flour
- ¼ cup almond meal
- 1 teaspoon bi-carb soda
- 1 tablespoon gluten free custard powder
- ¼ cup margarine
- 1 tablespoon lemon juice
- ½ teaspoon lemon essence
- 1 teaspoon vanilla
- ¼ teaspoon cinnamon
- ¼ teaspoon ginger
- ¼ currants
- ½ cup lactose free yoghurt
Steps
- Mix in dry ingredients, rub in margarine, mix in liquids then mix to a soft dough.
- Roll out to about 2cm thickness and use a cutter to cut shapes, place on greased tray and bake for 15 minutes. 180 deg Celsius oven or 170 Degree in fanforced oven.
