Ingredients
  • 1½ cups gluten free self raising flour
  • ¼ cup rice flour
  • ¼ cup almond meal
  • 1 teaspoon bi-carb soda
  • 1 tablespoon gluten free custard powder
  • ¼ cup margarine
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon essence
  • 1 teaspoon vanilla
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ¼ currants
  • ½ cup lactose free yoghurt
Steps
  1. Mix in dry ingredients, rub in margarine, mix in liquids then mix to a soft dough.
  2. Roll out to about 2cm thickness and use a cutter to cut shapes, place on greased tray and bake for 15 minutes. 180 deg Celsius oven or 170 Degree in fanforced oven.
