  • 1 kilogram chicken thigh fillets, halved
  • 2 clove garlic, crushed
  • 2.5 centimetre piece fresh ginger (15g), grated

  • 2 fresh kaffir lime leaves, torn
  • 230 gram canned sliced bamboo shoots, rinsed, drained
  • 400 gram canned baby corn, rinsed, drained, chopped coarsely
  • ¾ cup (180ml) chicken stock
  • 1 ⅔ cup (410ml) coconut milk
  • 2 tablespoon cornflour
  • 1 tablespoon water
  • 1 tablespoon grated palm sugar
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • ⅔ cup loosely packed fresh thai basil leaves
  • ⅓ cup loosely packed fresh coriander leaves
