  • 3 ribs celery , chopped
  • 1 green bell pepper chopped
  • 1 ½ teaspoon dried basil
  • 1 ½ teaspoon Cajun seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper
  • ¼ teaspoon cayenne pepper optional, add more for spice, if desired.
  • 14.5 ounce can diced tomatoes
  • 2 ½ cups low-sodium chicken broth
  • 1 ¼ cup long-grain white rice
