Carrot Ginger Soup
Ingredients

  • 2 pounds carrots (peeled and cut into 1-inch pieces)
  • 4 cups chicken stock
  • ¼ teaspoon red pepper flakes
  • 2 teaspoons honey
  • 1 lime (juice and zest)
  • ½ cup Greek yogurt (to garnish)
  • ½ cup parsley (chopped, to garnish)
  • Kosher salt and freshly ground black pepper (to taste)
