Keto Zucchini Lasagna

Ingredients
  • Homemade Marinara Sauce - Low carb by Rao's
  • 1 oz Ricotta cheese
  • 1 raw egg
  • 2 medium zucchini, thinly sliced long ways
  • ½ c Parmesan cheese
  • 1 cup mozzarella cheese
  • 1 lb ground turkey or hamburger
  • 3 cloves garlic
  • Italian seasoning to taste
Steps
  1. Pre-heat oven to 350 degrees
  2. Brown meat and garlic
  3. Add marinara sauce and Italian seasoning to taste
  4. In a separate bowl, mix cheese and egg
  5. Layer in meat mix, zucchini "noodles", and cheese mixture alternating each layer and ending with meat mixture.
  6. Cover with foil and place in a oven for 60 minutes
  7. After 60 minutes, remove foil and sprinkle with cheese. Cover and return to oven for 15 minutes until cheese has melted
  8. Remove foil again and broil for a couple minutes watching carefully until cheese browns slightly.
  9. Let rest for a few minutes to cool before slicing and serving
