Ingredients
  • 2 cup THM Baking Blend
  • 2 tbsp oat fiber
  • 3 tbsp Gentle Sweet
  • Zest of 1 lemon
  • ¼ tsp lemon extract
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup butter (grate on a cheese grater)
  • ½ cup 0% Greek yogurt
  • 2 eggs

  • Bake 375 for 15 minutes or till golden. You do not need a special pan, just pat into a circle about 1 inch thick. Cut into 8 and place on a parchment lined cookie sheet or spray.

  • 4 tbsp melted butter
  • 5 tbsp Gentle Sweet
  • ½ tsp vanilla extract
  • 4 tbsp Lemon juice
  • ½ tsp of Gluccie
  • Blend all the ingredients so it's not grainy. I used my Nutribullet. And to get it to thicken put it in the fridge for about 20 to 30 min. After I Blended it, it was liquidy. Let the gluccie or thickner work. Once it thickens you just dip the tops.
