Ingredients

  • 12 oz silken tofu

  • 2 tbsp tomato paste

  • 1 tsp rice vinegar
  • 1 tbsp peanut butter to the sauce
  • salt and pepper
  • 2 cups baby spinach chopped
  • ¼ cup cilantro leaves finely chopped
