Instant Pot Smokies & mushrooms Rotini in Roasted Garlic Alfredo sauce
This recipe uses the Instant pot

Ingredients
  • 1 package of Smokies sausage (5/pack)
  • 1 package of Oyster mushrooms (may sub for any mushrooms)
  • 4 cloves of Garlic
  • 2½ cups of chicken broth
  • 1 box of super greens Rotini (you can use any kind)
  • 1 jar of Roasted Garlic Alfredo sauce
  • 1 cup of shredded cheese (optional)
Steps
  1. Slice smokies, mushrooms and mince the garlic and set aside.
  2. Set the pot on sauté and add olive oil.
  3. Sauté the garlic until fragrant (2 minutes) and add the sliced sausages.  Sauté for about 3 more minutes.  Then add mushrooms and sauté for another 2 minutes.  Stirring occasionally.
  4. Turn off the instant pot by pressing cancel.  Remove the content from the pot and add a little of the chicken broth while turning the pot back to Sauté to deglaze.
  5. After deglazing, turn off the pot again and add the garlic, mushrooms and smokies back into the pot.
  6. Add the Rotini and the jar of pasta sauce and spread the sauce on top of the pasta.
  7. Add the chicken broth and put the lid on the pot.
  8. Set the pot on Manual for 5 minutes (half the time of cooking the pasta on the stove + 1 minute).
  9. Quick pressure release when the pot is done cooking and beeping.
  10. Add the shredded cheese to the pasta slowly while keeping the pot on the keep warm setting.
  11. Let the pasta sit in keep warm for about 5 minutes until the sauce thickens.
