  • 1 tablespoon olive oil
  • 4 large cloves garlic, minced,
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 pound ground beef
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 bay leaves
  • 1 teaspoon oregano
  • 2 tablespoons red wine vinegar
  • ½ cup white cooking wine
  • 1 can baby peas drained
  • 1 (8 ounce) can tomato sauce or 1 can of V8 (I like the bit of sweetness a V8 adds)
  • large pimento stuffed green olives, quartered for garnish
  • 2 ripe plantains, fried, or ⅓ cup raisins
