Miso Mushroom Crispy Rice
Ingredients
  • 2 to 2½ pounds assorted mushrooms, washed and torn into pieces
  • 3 tablespoons ¼ cup olive oil
  • ¼ cup 2 tablespoons white miso
  • 1 tablespoon Momofuku Rice Vinegar
  • 2 teaspoons white sugar
  • 1 teaspoon 3 tablespoons Momofuku Soy Sauce
  • 1 scallion, sliced
  • 1 large yellow onion, sliced
  • 6 cloves garlic, sliced
  • 2 cups short grain white rice
  • 1 cup dry white wine
  • 3½ cups mushroom (or vegetable) broth
