ZUCCHINI SOUP – Mom Martin

  1. Saute 1 onion in small amount of olive oil.  Add 1 quart chicken broth.  Add about 8 medium zucchini, sliced, and 1 t curry or tarragon.  Cook until tender, put through blender or use stick blender.  Serve hot or cold (great with sour cream).  Can freeze.
Notes
  • For IP I sauteed onion then added broth, 8 med large zucchini and seasonings.  Manual to 0.  Short time NPR.  Boat motor.  Blah flavor so added salt and Mural of Flavor.  Yummy!
