Instant Pot Lemon Butter Chicken, Via Jeannine Ross
Prep Time: 15 minutes | Cook Time: 8 minutes Manual or Poultry (High Pressure) / 5 minutes NPR (Natural Pressure release), 3 minutes final browning.
Ingredients
  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon smoked paprika
  • ½ tsp Kosher salt and freshly ground black pepper, or to taste
  • 3 tablespoons butter, divided
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ¼ cup freshly grated Parmesan
  • Juice of 1 lemon, divided
  • 1 teaspoon dried thyme
  • 2 cups baby spinach, chopped

  • 2 cups brown rice, rinsed
  • 2 ½ cups water
