Ingredients
- subheading: For the Pork:
- 2lb pork loin
- 1 tablespoon minced garlic
- 1 tablespoon poultry seasoning (we use Bells)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- subheading: For the Stuffing:
- 1 Box Bells Stuffing (You can also use stovetop)
- 3 stalks celery, chopped
- 1 small onion, chopped
- 1 carrot, chopped into small pieces
Steps
- subheading: For the Pork:
- If it’s a longer piece, you’ll have to cut it in half so it fits in the pan.
- Place in a non-stick baking pan, making sure it fits into your Instant Pot with an inch around to spare.
- Mix together seasonings and garlic and coat the entire pork loin.
- Set Aside
- subheading: For the Stuffing:
- Saute onion, celery and carrots until onion is tender and clear, about 10 minutes.
- Prepare stuffing according to directions on box.
- Add cooked vegetables and mix well.
- Place directly on top and surrounding pork so that it’s about 1” thick on top of pork.
- Add 1 cup of water to the IP, along with the trivet.
- Place pan with pork and stuffing on trivet, and cover with IP lid.
- Cook on high pressure for 30 minutes.
- NPR for 10 to 15 minutes.
- We cook pork to 165 degrees, but your times may vary depending on how thick your cut is. Ours was approximately 3 inches thick from top to bottom.
- If you like your stuffing crispy on top, place in the oven on “broil” for 5 minutes.
- Remove, slice, and enjoy.
